Pizza bread with rosemary, onion and feta

Autumn is my favourite season.  The days are still warm and the evenings have just the right amount of chill.  For me it is the best time for a lazy day outside on the patio, enjoying the last bits of warm weather.  And lunch doesn’t have to be anything fancy; in fact, the simpler it is, the better.  Today we’ve opted to make a very simple pizza bread with rosemary, onion and feta to serve as a starter for some friends that’s coming over.(Truth be told, I can probably have a whole pizza  bread by myself for lunch so thank goodness I HAVE to share it!)

The recipe is so simple that it is hardly a recipe at all.  It’s just the perfect snack while everyone is chatting away.  I love to serve it with balsamic vinegar on the side, and slices of sweet, ripe tomatoes adds a nice bit of freshness.

Pizza bread with rosemary, onion and feta

(serves 4)

Ingredients:

For the dough:

1.5 cups of self raising wheat flour

1/2 teaspoon salt

tbsp of olive oil

125 ml of water

For the toppings:

10 ml olive oil

2 cloves garlic cloves, crushed

small sprig of rosemary, chopped

1/2 red onion, thinly sliced

100g feta

Method:

  1. Pre-heat the oven to 220°C
  2. Mix all the ingredients for the dough together and knead until a smooth dough is formed
  3. Rest the dough for 30 minutes
  4. Once the dough is ready, roll it out in the shape of your baking tray
  5. Lightly oil the baking tray and place the dough on the tray
  6. Dizzle about 10ml olive oil over the dough
  7. Top with the crushed garlic, chopped rosemary, sliced red onion and crumble the feta over
  8. Bake in the oven for 12 to 15 minutes
  9. Serve with a drizzle of olive oil and some balsamic vinegar on the side

Soon we’ll have to switch over to some red wine when the weather gets colder, but I must say that the Kleine Zalze Sauvignon Blanc is absolutely doing the trick today!
